Here’s our H3I classic vegetable lasagna recipe that has been a hit here for years. We’ve lightened our traditional lasagna by leaving out the ground beef (although if you miss it, you could try substituting Boca Burger crumbles in place of the beef). In addition we have substituted fat free ricotta and cottage cheese rather than using the full fat versions.
We also use a part skim mozzarella in place of whole milk mozzarella. In place of white pasta we use SOY 7 pasta by ADM. There are also other whole grain pastas available such as Barilla Plus, Mueller’s Multigrain, and Healthy Harvest Whole Wheat. Finally we fortify this delicious dish with a wonderful medley of vegetables. Don’t forget from earlier newsletters that tomatoes, whole grains, broccoli and garlic are Power Foods.
