Overcoming Emotional Eating Workshop
December 3rd–5th, 2009
This three-day workshop, led by H3 Wellness Counselor Johanna Smith-Ellis, will give you the tools and support needed to regain control of your eating. You will have the opportunity to explore the many ways your emotions and everyday stressors can affect your relationship with food and learn a variety of mindful techniques that are key to overcoming these self-sabotaging eating patterns. Limited to 10 participants.

Tired of watching her son’s life from the sidelines, fed up with the cycle of losing and gaining, and seeing the effects of diabetes on her family—Laura Hay decided to change her life. She checked into Hilton Head Health for two weeks in January of 2008. Once she made the decision to better her health and change her mindset, all of her obstacles seemed to melt away and were happily replaced by opportunities. Today, Laura coaches her son’s soccer team, writes down her goals, tracks her progress and has lost 60 lbs.

Thai Candied Pumpkin Seeds
While you carve a scary face into your jack-o-lantern, make sure to save the seeds! Pumpkin seeds are low in fat and rich in zinc and protein, but when mixed with sweet-hot-salty syrup and baked until crunchy they do become rather addictive so be sure to follow the portion size! A few scattered on a salad go a long way.

Demerara (raw) sugar |

¼ cup |
Water |

½ cup |
Maple syrup |
|
1 tsp. |
Cayenne pepper |
|
1 tsp. |
Kosher salt |

3 cups |
Raw organic pumpkin seeds |
~ Heat oven to 400°
~ Combine first five ingredients in a sauce pot and gently simmer to a light caramel
~ Stir in pumpkin seeds
~ Spread seeds thinly on a spray-oiled baking sheet and place in hot oven for 10 minutes
~ Remove from oven and stir seeds with a broad, flat, metal spatula, pulling seeds from the edges of the pan to the middle and the middle to the edges to help evenly brown
~ Return pan to oven and bake 5-10 minutes longer until seeds are vigorously bubbling, watch carefully
~ Remove from oven and stir again. The stirring causes crystallization
~ Scatter seeds onto a sheet of parchment or wax paper and allow to cool
~ When cool break apart
~ Store in an air-tight container

Looking for a way to get out of your fitness rut? Join Adam Martin and a few H3 Guests for this month’s Trainer’s Palette, which features the next set of exercises in our Breaking the Routine video series. So grab some dumbbells and a Fitball and learn a few new exercises to strengthen your lower body.
Having strong legs is important to perform daily tasks like walking up and down stairs, as well as protecting your knees and ankles from injury. Try to perform these exercises at least twice a week on non-consecutive days.
