Heart Health+ Month, 2010

Since 1963, February has been recognized as American Heart Month by the American Heart Association. The purpose of this month is to educate and encourage heart healthy habits to promote the prevention of cardiovascular diseases. In honor of American Heart Month, we’ve added Heart Health+ featured seminars and activities to our Healthy Lifestyle™ schedule. Join us any week in February and you will have the opportunity to participate in our weekly Heart Month 5K Walk/Run, CPR Instruction seminar, Low-sodium cooking demonstration and our Pedometer Challenge, where we will track each Guests’ steps (as a group) across the U.S.

Learn how to prepare healthy cuisine at its finest during H3’s popular cooking workshop. Facilitated by Chef Marvis Hinson, this fun three-day event is filled with interactive cooking demonstrations, instructional sessions and hands-on experience in our special demonstration kitchen. Create brand-new dishes, get tips on how to make your favorite recipes healthier and much more. (Limited to 14 participants.)

Sun Coast Salmon

Sun Coast Salmon

Pump your heart full of healthy omega-3’s with this month’s Heart Healthy Sun Coast Salmon recipe. Not only is fish a great alternative to red meat, it is packed with omega-3 fatty acids. Recent research shows that eating oily fish containing omega-3 fatty acids (salmon, trout, and herring) may help lower your risk of death from coronary artery disease.

The American Heart Association recommends eating omega-3 rich fish options at least two times (two servings) per week. A serving of fish is roughly the size of a deck of cards (3 ounces).

4 cups

Mixed baby salad greens

1½ lbs.

Fresh fish*
(cut into 5 oz. portions)

2 cups

Fish stock

2 Tbsp.

Sun dried tomatoes, julienne

2 Tbsp.

Greek olives, slivered

¼ cup

Citrus vinaigrette

4 oz.

Feta or goat cheese

* Also try sea bass, grouper, snapper, halibut or jumbo scallops.

~ Place salad greens in Japanese steamer basket

~ Lay fish filets on top of greens

~ Pour fish stock into the bottom of a pot that will fit the steamer

~ Steam fish for 5-7 minutes depending on thickness

~ Combine tomatoes, olives and vinaigrette, and gently warm

~ Stir feta or goat cheese (if cheese is soft use as a topping) into vinaigrette

~ Place steamed fish and greens on a warmed serving plate and top each piece with a portion of the warm vinaigrette
