Strawberry Mint Salsa With Grilled Chicken

Mint is one of the herbs that come to mind when thinking about summer months and trying to stay cool. It's refreshing and can jazz up fruit salads and beverages.

Strawberry Mint Salsa with Grilled ChickenIngredients:

2 cups

Strawberries, diced

1/4 cup

Red onion, small dice

1/4 cup

Mint, fresh, chiffonade

1 each

Lime, juice

1/4 teaspoon 


1/4 teaspoon 

Ground black pepper



  • In a large bowl combine; strawberries, red onion, mint, lime, salt, and pepper.
  • Serve immediately or store in the refrigerator.

4 ounce

Chicken breast, boneless, skinless




Ground black pepper



  • Preheat grill and preheat oven to 375 degrees.
  • Spray non-stick cooking spray on the grill.
  • Season with salt and pepper.
  • Once the grill is hot, lay breast on the grill grates.  Cook for about 4 minutes.
  • Then flip chicken breast on other side and let cook for another 4 minutes.
  • Remove chicken breast from grill and place on a lightly greased sheet tray.
  • Place sheet tray in the oven for another 4 minutes or until the internal temperature of the chicken breast has reached 160 degrees.
  • Once the chicken has reached an internal temperature of 160 degrees, remove from oven and let rest for about 5 minutes for the chicken to carry over cook to 165 degrees.
  • Serve warm with our strawberry mint salsa or your favorite sauce.
