New Food Highlight: Japanese Yam

Japanese Yam or Mountain Yam is not your typical orange root vegetable. The flesh of the yam is white and the skin tends to be a purplish, red. It is oblong in shape, the taste is subtly sweet, and the meat is starchy like any root vegetable.

 

Root vegetables bulk up any meal without adding a ton of fat or cholesterol because they are plant-based! A half a cup of Japanese yams provides 115 calories, 4g of fiber, an excellent source of vitamin A and C, and is rich in potassium. If you are tired of looking at the same old sweet potato or yam, these Japanese yams might be the fix to break up the monotony. They can be used as an alternative to any sweet potato dish and can also be used creatively like chopped up in chili!

 

I was hooked the first time I tried them. I baked it until it was fork tender, sliced it in half, and served a sweet curry with chickpeas on top of it. It was delicious!
