Autumn Alfredo
Ingredients:
½ cup | Butternut squash, spiraled |
2 ounces | Whole wheat spaghetti, cooked |
1 cup | Zucchini, spiraled |
1 cup | Kohlrabi, spiraled |
¼ cup | Sundried tomatoes, rehydrated |
½ cup | Autumn Alfredo Composed Sauce, see recipe below |
Method:
- Preheat medium sauté pan at medium heat.
- Add butternut squash, kohlrabi, and spaghetti.
- Add ¼ cup water to steam the ingredients for about 3 minutes or until ingredients are warm.
- Add Autumn Alfredo Composed Sauce, sundried tomatoes, and zucchini.
- Cook until warm and combined.
- Serve in a bowl.
- Garnish with basil micro greens.

Autumn Alfredo Composed Sauce
Ingredients:

Olive oil |
2 cups |
Shallots, shaved |
¼ cup |
Garlic, minced |
¼ cup |
Vegetable stock |
1 cup |
Mushrooms, sliced |
1 Tablespoon |
Rosemary, minced |
1 Tablespoon |
Thyme, minced |
1 ½ cups |

Method:
- Preheat medium sauté pan on medium-low heat.
- Add olive oil.
- Sauté shallots, garlic, and mushrooms until softened and fragrant.
- Add thyme and rosemary.
- Deglaze pan with vegetable stock, cook for 2-3 minutes.
- Add prepared Autumn Alfredo Nut Base Sauce, cook until combined (Try not to overcook, the sauce will become too thick).

Method:
- Combine all ingredients in a vita mix, blend until smooth.
