Autumn Alfredo Recipe

Autumn Alfredo

Ingredients:

½  cup Butternut squash, spiraled
2  ounces Whole wheat spaghetti, cooked
1  cup Zucchini, spiraled
1  cup Kohlrabi, spiraled
¼  cup Sundried tomatoes, rehydrated
½  cup Autumn Alfredo Composed Sauce, see recipe below

 

Method:

  • Preheat medium sauté pan at medium heat.
  • Add butternut squash, kohlrabi, and spaghetti.
  • Add ¼ cup water to steam the ingredients for about 3 minutes or until ingredients are warm.
  • Add Autumn Alfredo Composed Sauce, sundried tomatoes, and zucchini.
  • Cook until warm and combined.
  • Serve in a bowl.
  • Garnish with basil micro greens.

Autumn Alfredo Composed Sauce

Ingredients:

1  teaspoon

Olive oil

2 cups

Shallots, shaved

¼  cup

Garlic, minced

¼  cup

Vegetable stock

1  cup

Mushrooms, sliced

1  Tablespoon

Rosemary, minced

1  Tablespoon

Thyme, minced

1 ½  cups

Autumn Alfredo Nut Base Sauce, see recipe below

 

Method:

  • Preheat medium sauté pan on medium-low heat.
  • Add olive oil.
  • Sauté shallots, garlic, and mushrooms until softened and fragrant.
  • Add thyme and rosemary.
  • Deglaze pan with vegetable stock, cook for 2-3 minutes.
  • Add prepared Autumn Alfredo Nut Base Sauce, cook until combined (Try not to overcook, the sauce will become too thick).

Autumn Alfredo Nut Base Sauce

Ingredients:

1 ½  Tablespoons

Chickpea miso paste

2  Tablespoons

Nutritional yeast

¼  teaspoon

Crushed red pepper flakes

1  teaspoon

Salt

2  Tablespoons

Lemon juice

1/8  teaspoon

Nutmeg, ground

1  cup

Walnuts

1  cup

Cashews

2  cups

Water, boiling

 

Method: 

  • Combine all ingredients in a vita mix, blend until smooth.
  • This recipe makes 2½ cups. Store in refrigerator, covered.
