Beef & Mushroom Sloppy Joes

In the Healthy Kitchen, we teach guests how to increase nutrition without compromising taste. Taste is important because it is the number one reason why people choose the foods they eat, and what we eat plays an important role in our health. This Beef & Mushroom Sloppy Joes recipe uses lean beef mixed with mushrooms, sweeten the sauce with molasses instead of refined sugar and incorporate fresh herbs to add tons of flavor. These sloppy joes are good for you without sacrificing any of the fun or flavor.



1/2 Tablespoon  

Olive oil

16 ounces

Crimini mushrooms, sliced

12 ounces

Ground tenderloin (90% lean/10% fat)

1 1/2 cups

Onion, chopped

6 cloves 

Garlic, minced

1/2 cup

Tomato paste

1 Tablespoon

Oregano, fresh, chopped

2 Tablespoons

Red wine vinegar

2 Tablespoons

Worcestershire sauce

1/2 Tablespoon


1/2 teaspoon 


3/4 teaspoon 

Black pepper, ground

1 Tablespoon

Chili powder

1/2 teaspoon

Hot Sauce



  • Heat oil in a large sauté pan.
  • Add ground beef, sauté until browned, about 4 minutes.
  • Place sliced mushrooms in a food processor and pulse until finely minced or desired size is achieved.
  • Add mushrooms, garlic and onions to the pan with the meat and cook until onions are tender.
  • Mix in tomato paste, oregano, red wine vinegar, Worcestershire, molasses, and salt, black pepper, chili powder, and hot sauce; cook until most of the liquid has evaporated and mushrooms are tender.
  • Serve warm on a whole wheat bun, enjoy!
